摘要:通过青稞发芽富集γ-氨基丁酸(GABA),并探究其它物质成分,包括蛋白质、淀粉、可溶性糖、还原糖、β-葡聚糖和总酚的变化,同时分析比较三个不同品种青稞(瓦兰、柴青1号、种黑)发芽后GABA含量的变化和其它营养成分的变化,进而选出其中相对优良品种。经试验分析,三个品种青稞在发芽3d内,其GABA含量显著增加,β葡聚糖和淀粉含量都呈下降趋势,蛋白质含量基本文持不变,可溶性糖、还原糖和总酚含量呈上升趋势。对比瓦兰、柴青1号和种黑这三个青稞品种,发现柴青1号青稞品种中β葡聚糖、总酚和GABA这些生物活性物质含量较高。28406 毕业论文关键词:青稞;发芽;富集;不同品种;γ-氨基丁酸
Enrichment of γ-aminobutyric acid in highland barley through germination
Abstract:In this paper, the changes in contents of γ-aminobutyric acid (GABA), protein, starch, soluble sugar, reducing sugar, β-glucan and total phenol were studied during the germination of highland barley. Three highland varieties were studied, namely Valan, and Chai Qing No.1, and species black. After germination for 3 days, the GABA content increased significantly, whereas the contents of β-glucan and starch decreased markedly. Meanwhile, protein content stayed at a constant level and soluble sugar, reducing sugar and total phenol content exhibited an increasing trend. Furthermore, the “Chai Qing No.1” variety was richer in GABA, total phenol and β-glucan than the other varieties.
