Abstract  Food is the first necessity for people. Catering culture is the epitome of human daily life which is directly related with their health mentally and physically. Various local customs, geographic positions, climatic features and many other factors determine distinctions in Chinese and western dietetic ideas, food materials, table manners and utensils. Catering is the reflection of a region or a country. As the pace of international communication continues to accelerate, it is imperative for people to do researches on catering differences in order to evite misunderstandings and communication barriers.  71707

Chinese and western caterings reflect the culture of a country comprehensively. This paper is completed by consulting home and abroad documents and network information. From the aspect of inter-cultural communication, it is designed by five main parts. They are dietetic ideas, food materials, table manners, catering utensils and the causes of differences. First of all, Chinese pay more attention to food taste and use food to cure diseases, called dietary therapy, while western people ensure the nutritions in food, called rational ideas. Secondly, the paper discusses different food materials with regard to staple food and dietetic seasonings. Thirdly, on the basis of respective historical heritage, table manners are typical reflections of local culture. Fourthly, catering utensils are clarified into two sides——table utensils and kitchen utensils. Finally, this paper sums up two causes of these differences and analyze them comprehensively. That is geographic positions and economic factors.

 The paper centers on the premise of inter-cultural communication to discuss how to 

avoid catering conflicts on the basis of respective cultural differences and how to go on increasingly intensive activities under contemporary international communication circumstances. By comparing and concluding these differences helps people to have a better understanding of Chinese and western catering culture. Meanwhile it is a valid solution to evite catering conflicts due to these distinctions.

摘要  民以食为天,饮食文化是人类生活的缩影,它直接关系到人类的身心健康.迥异的风俗习惯,地域特征,人文环境等因素,决定了中西方在饮食上观念,食材,餐桌礼仪,餐具上各有千秋,是一个地区、国家生活方式的体现。随着国际化交流的不断深入,为了避免因为饮食文化差异而形成误解,造成各国人民的交际障碍,当今形式敦促人们对饮食差异的研究迫在眉睫。

  文章通过查询国内外文献资料、网络信息搜集等方法,在跨文化交流这个大前提下,从饮食文化的视角出发,对饮食观念、饮食食材、餐桌礼仪,饮食餐具和产生差异的原因这些方面进行了研究。首先是饮食观念上的差异,中国人自古讲究食疗和食补,西方人追求食物的营养,是种理性的饮食思维;其次是食材的差异,分别是中西方原料和佐料的使用区别;接着在各国历史文化传承的基础上,对餐桌礼仪进行对比;其次从饮食餐具的角度,分析餐桌餐具和厨房餐具的差异;最后从地理环境,经济发展的角度深入探讨饮食差异的原因。

  本文深入探讨在跨文化的饮食交流上,如何在各国文化迥异的前提下,避免饮食文化的冲突?如何在跨文化交流的环境中,进行饮食文化的深入交流? 通过对比总结出中西方饮食上存在的差异,增强中西方的了解和沟通,避免因饮食文化的差异而产生矛盾和冲突。
