摘要:人类健康与肉类食品的摄入密不可分。目前国内外肉类食品掺假问题屡见不鲜,受到了公众和媒体的广泛关注,肉类掺假检验技术的研发已逐渐成为热点。本项目旨在研究一种基于蛋白质分析的动物源性定量分析技术,通过高效液相色谱质谱联用分析特异性的氨基酸序列,准确甄别样本中的肉源性组成,采用绝对定量或相对定量的方法分析得到样品中5种动物肌肉的准确含量,建立了一种基于Nano LC和LTQ-Orbitrap XL的肉类溯源性检测鉴别方法,进而达到辨别摻伪肉质加工品的目的。38801 毕业论文关键词:肉类食品掺假;特征多肽;高效液相色谱质谱联用
One kind of design in meat species identification method
Abstract: Human health is closely related to the intake of meat.At present, domestic and foreign meat adulteration problems are common, which has received extensive attention from the public and the media. The development of meat adulteration testing technology has gradually become a hot spot. The purpose of this project is to develop an animal derived quantitative analysis technique based on protein analysis. By means of analyzing the specific amino acid sequences with liquid chromatograph mass spectrometer,the meat derived components in the samples were screened accurately. Then, with absolute quantitative or relative quantitative method, the accurate content of 5 kinds of animal muscle was obtained.As a result,we develop a new method of meat traceability detection and identification based on Nano, LC and LTQ-Orbitrap XLand then the purpose of identifying adulterated meat processing products was achieved.
