摘要:本课题采用添加β-环糊精和低胆固醇氧化酶于牛奶中来降低牛奶的胆固醇含量,并且运用分光光度法和高效液相色谱法来测定胆固醇残留量。通过单因素试验、正交试验以及响应面试验法得到最佳的反应条件为:反应温度60℃,反应时间60min,离心转速12000rpm,β-环糊精添加量2%,在此条件下所测定的胆固醇脱除率最高达到99.1%。用低温离心将β-环糊精去除,测定β-环糊精残留量。根据实验结果对两种降低牛奶胆固醇的方法进行比较分析,发现β-环糊精法经济、实用、脱除率高,远胜于低胆固醇氧化酶法。

The Development of Low Cholesterol Milk
Abstract: The report was to add β-CD and Low cholesterol oxidase in milk to low the cholesterol, and to use Spectrophotometric and HPLC methods to measure the cholesterol residues. We selected the optimum condition of enzymolysis reactions from The single factor test、Orthogonal test and The response surface test. The results showed that The reaction temperature was 60℃,The reaction time was 60min,The centrifugal rotational speed was 12000rpm,the quantity of β-CD was 2%. On this condition, the removal rate of Cholesterol in milk was max. We removed the β-CD by Cryogenic centrifugal to measure the β-CD residue. Comparing with the two methods, we found that the β-CD method was better than Low cholesterol oxidase method. It was economic, practical and efficiency.
