Study on the relationship between stability and emulsion rheological properties of Microencapsulation of rose fragrance
Abstract: This work discussed the manufacture of microencapsu1ation of rose oil flavor by cyclodextrin. The effect of processing parameters which included the ratio of core to wall,temperature, churning time and stirring speed. It also studied the relationship between stability and emulsion rheological properties of Microencapsulation of rose fragrance.
